if you're doing a holiday meal for a small group, or even just yourself, a great way to save yourself lots of time and energy is to order a pre-made loaf or frozen meal like this Veestro Turk'y Scaloppini dinner and dress it up with some of your own favorite sides and sauces.  this meal came with some green beans and sweet potato mash on the side, but thanksgiving meals, in my opinion, are all about the sides . . .

usually, around this time of year (well really, pretty much as soon as i can get away with pretending it's fall all the way through christmas) i am ALL about ALL things pumpkin.  but this year, for some reason, i haven't really been feeling it as much.  maybe it's the weird pregnancy cravings, but i've been so much more into other kinds of squash this season.  finally, the other day i got into full on pumpkin mode and had to have some pumpkin spice bread...

years ago i used to be known for my red velvet cupcakes with cream cheese frosting.  i even have a friend who used to visit from NY all the time and his request before every visit was that those cupcakes be waiting for him when he landed.  they were definitely a favorite around here, but definitely not something you could guiltlessly eat on the regular...

this latte though.. we just got back from a road trip with stops in chatanooga, nashville, knoxville, gatlinburg, louisville, asheville, charleston and orlando.  and of course, we ate lots of yummy food along the way!! one of the most memorable things we enjoyed was a butternut squash turmeric latte at a little, healthy quick service restaurant called BimBeriBon in asheville, north carolina.  it literally smelled just like. . .

easy veggie lo mein

Two ramen recipes back to back?? I know, I know, it's a lot, but you know that feeling you get when you discover something new that you really like?  Well, that's how I feel about these noodles.  They were such a great Costco find! 👏  So, yea I got inspired.  And I started craving stir fry/lo mein the other night, so I figured that these noodles would be a great healthier option for a veggie lo mein dish. . . 

15 minute healthy cup of noodles

Ok, don't we all have that one period of time in our lives where we practically lived off ramen noodles?  I used to love bringing a cup of noodles in my packed lunch during high school.  During lunch, I'd heat up a cup of tap water in the microwave in the college guidance office and pour it over those shriveled up dehydrated vegetables (if you can even call them that) and buttery noodles and mix it up with the most artificial seasoning packet there ever was.  And it was damn good. 

5 minute healthy nachos

These are LEGIT.  I'm totally hooked on them.  Seriously, after the first time I made them, I made them on repeat every day for the rest of the week.  They take less than 5 minutes to make.  I almost always have all the ingredients needed on hand to make them.  They're delicious, satisfy all my savory junk food cravings anndddddddd are wayyyyyy healthier than most other nachos out there. . .

It's peanut buttah jellayyy time!  Who doesn't love a good, old classic PB&J from time to time?? Well, with these cookie sandwiches you can replace all the empty calories and carbs in a traditional sandwich with a protein packed, whole foods based snack without sacrificing any of that PB&J deliciousness.

Once you start, you just can't stop.  Seriously, these things are UBER addicting.  I could pop them into my mouth ALL DAY LONG.  These fudgey balls of chocolatey goodness are the perfect little snack to satisfy all your sweet tooth and chocolate cravings.  And they'll probably even give you a little boost of energy (at least for me they do).  They're packed with tons of healthy fats, carbs and superfoods.  So, basically, there's no reason not to put your phone down or step away from your computer right now and go make these!

Let's face it, vegetables aren't the easiest thing to get a toddler to eat.  Put a plate of fruit in front of mine and she can't shovel it into her mouth fast enough.  Veggies, on the other hand, are inspected, cherry-picked, and often left on the plate.  Of course, she's got her favorites like: broccoli, green beans, and peas.  But then there are the untouchables . . .
