Veggie Sticks with Vegan Ranch Dip

If your looking for a quick, healthy and refreshing snack, this is something you can make in under ten minutes—all it takes is a few chops and a shake.  If you’re making this for kids, you can try adding more vegetables, like zucchini and bell peppers—also slicing them in matchsticks.  I’ve found that when it comes to introducing my toddler to new vegetables, or vegetables she has been standoffish to, they are more well received when offered as a finger food with an accompanying dip.  

Ingredients

  • 3 Celery 
  • 3 Carrots
  • 4 tablespoons Vegenaise
  • Juice of 1/4 lemon
  • 1 tablespoon freshly chopped parsley, finely chopped
  • 2 cloves of garlic, minced
  • Salt 
  • Pepper 

Directions:

  1. Cut carrots and celery into 3-inch long, thick match sticks. 
  2. Combine Vegenaise, lemon juice, parsley, garlic and a few dashes of salt and pepper in a mason jar.  Seal jar and shake until ingredients are combined.  
  3. Serve and Enjoy!
